- 4 Roma tomatoes diced
- 1/4 cup basil leaves chopped
- 1 garlic clove minced
- 1 tbsp extra virgin olive oil
- 1–2 tsp balsamic vinegar
- salt to taste
- 170 g feta cheese
- 115 g cream cheese
1. Combine diced tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt. Let marinate.
2. In a food processor, whip feta and cream cheese until smooth.
3. Spread cheese mixture into a serving dish.
4. Top with the tomato mixture.
5. Drizzle with balsamic glaze or more olive oil.
6. Serve with crostini, pita chips, or mini naan.
For a sweeter flavor, use balsamic glaze instead of vinegar.
