Vegetarian Breakfast Idea (Mediterranean Style)

Ingredients
  

  • 2 eggs
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup olives
  • 1/4 cup feta cheese
  • Olive oil for cooking
  • Salt
  • Pepper

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add the halved tomatoes and olives to the pan. Cook briefly, about 1 to 2 minutes.
  • Crack the eggs directly into the skillet around the vegetables.
  • Sprinkle the feta cheese, salt, and pepper over the eggs and vegetables.
  • Cover the skillet and cook until the eggs are set to your preference.
  • Serve the skillet breakfast warm with bread.

Notes

This dish is excellent served alongside toasted whole-grain bread for dipping into the runny yolk, if you prefer.
