Vegetarian Breakfast Idea (Mediterranean Style)

- 2 eggs
- 1/2 cup cherry tomatoes halved
- 1/4 cup olives
- 1/4 cup feta cheese
- Olive oil for cooking
- Salt
- Pepper
Heat olive oil in a skillet over medium heat.
Add the halved tomatoes and olives to the pan. Cook briefly, about 1 to 2 minutes.
Crack the eggs directly into the skillet around the vegetables.
Sprinkle the feta cheese, salt, and pepper over the eggs and vegetables.
Cover the skillet and cook until the eggs are set to your preference.
Serve the skillet breakfast warm with bread.
This dish is excellent served alongside toasted whole-grain bread for dipping into the runny yolk, if you prefer.
