Ingredients
  

  • 1 tbsp oil
  • 1 tbsp red curry paste
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup mixed vegetables (carrots, broccoli, bell peppers)
  • to taste Salt

Instructions
 

  • Heat oil in a pot and stir in the curry paste.
  • Add the vegetable broth and coconut milk.
  • Bring the mixture to a gentle simmer.
  • Add the vegetables and cook for 12 to 15 minutes until they are tender.
  • Season with salt and serve the soup.
