  • 1 tbsp Thai red curry paste
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced

Instructions
 

  • Heat oil in a pot over medium heat.
  • Add curry paste and cook until fragrant.
  • Pour in broth and coconut milk.
  • Add vegetables and simmer for 12 to 15 minutes.
  • Season lightly and serve hot.
