Thai Red Curry Chicken Soup

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 tbsp Thai red curry paste
  • 1 lb chicken breast, sliced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 cup bell peppers, sliced
  • 1 cup mushrooms
  • to taste Salt
  • Fresh cilantro optional

Instructions
 

  • Heat oil in a pot over medium heat.
  • Stir in curry paste and cook 1 minute until fragrant.
  • Add chicken and cook until lightly opaque.
  • Pour in broth and coconut milk.
  • Add vegetables and bring to a gentle simmer.
  • Cook 12–15 minutes until chicken is tender.
  • Season lightly and garnish with cilantro.
