Sweet Cinnamon Banana Cake

This recipe transforms the familiar banana bread into a softer, cake-style bake. Making this into a cake makes it feel more celebratory.

Ingredients
  

  • 2 ripe bananas mashed
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 tsp cinnamon

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a square baking pan.
  • Mix the mashed bananas, eggs, sugar, oil, and vanilla until the mixture is smooth.
  • Add the flour, baking powder, baking soda, and cinnamon to the wet ingredients.
  • Mix the batter until the ingredients are just combined. Do not overmix.
  • Pour the batter into the prepared pan and smooth the top surface.
  • Bake for 35 to 40 minutes.
  • Let the cake cool before you cut it into squares.
