Ingredients
  

  • 3 chicken breasts cut into chunks
  • 3 cups baby potatoes halved
  • 2 cups carrots sliced
  • 1 zucchini sliced
  • 1 red bell pepper
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 1/2 lemon juice juice of

Instructions
 

  • Preheat your oven to 200°C.
  • Toss the potatoes and carrots with 1 tablespoon of olive oil. Roast them on a baking sheet for 15 minutes.
  • Add the chicken chunks, zucchini, and bell pepper to the baking sheet.
  • Mix the remaining olive oil, minced garlic, paprika, Italian seasoning, salt, pepper, and chicken broth in a bowl. Pour this mixture over the ingredients on the tray and toss everything together.
  • Roast for 25 to 30 minutes, or until the chicken reaches an internal temperature of 75°C and the vegetables are tender.
  • Finish the dish by stirring in the lemon juice.

Notes

Serve family-style on a large platter. Garnish with chopped parsley and lemon wedges for a bright look.
