Summer Dinner Ideas for Family
Family-style meals made summer evenings feel more relaxed. This recipe provides an easy chicken and vegetable sheet pan dinner suitable for a family meal.

- 3 chicken breasts cut into chunks
- 3 cups baby potatoes halved
- 2 cups carrots sliced
- 1 zucchini sliced
- 1 red bell pepper
- 3 tbsp olive oil
- 3 cloves garlic minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1/2 lemon juice juice of
Preheat your oven to 200°C.
Toss the potatoes and carrots with 1 tablespoon of olive oil. Roast them on a baking sheet for 15 minutes.
Add the chicken chunks, zucchini, and bell pepper to the baking sheet.
Mix the remaining olive oil, minced garlic, paprika, Italian seasoning, salt, pepper, and chicken broth in a bowl. Pour this mixture over the ingredients on the tray and toss everything together.
Roast for 25 to 30 minutes, or until the chicken reaches an internal temperature of 75°C and the vegetables are tender.
Finish the dish by stirring in the lemon juice.
Serve family-style on a large platter. Garnish with chopped parsley and lemon wedges for a bright look.
