Summer Crockpot Chicken Recipes

This recipe uses a slow cooker to make chicken cooking simple during the summer months. It combines chicken with vegetables and broth for a tender meal.

Ingredients
  

  • 2 chicken breasts
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 1/2 onion sliced
  • 2 cloves garlic
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Place all ingredients into the crockpot.
  • Cover and cook on LOW for 5 to 6 hours or HIGH for 3 hours until the chicken is tender and easily shreddable.
  • Remove the chicken, shred it slightly, then return it to the sauce and mix well.
  • Taste the mixture and adjust seasoning as needed.
  • Serve in bowls with fresh basil and drizzle olive oil over the top for a glossy finish.
