Summer Crockpot Chicken Recipes
This recipe uses a slow cooker to make chicken cooking simple during the summer months. It combines chicken with vegetables and broth for a tender meal.

- 2 chicken breasts
- 1 zucchini sliced
- 1 cup cherry tomatoes
- 1/2 onion sliced
- 2 cloves garlic
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
Place all ingredients into the crockpot.
Cover and cook on LOW for 5 to 6 hours or HIGH for 3 hours until the chicken is tender and easily shreddable.
Remove the chicken, shred it slightly, then return it to the sauce and mix well.
Taste the mixture and adjust seasoning as needed.
Serve in bowls with fresh basil and drizzle olive oil over the top for a glossy finish.
