Summer Chicken Skillet Dinner

Ingredients
  

  • 2 chicken breasts
  • 1 tbsp oil
  • 2 cloves garlic
  • 1 cup zucchini
  • 1/2 cup tomatoes
  • 1/2 cup broth
  • parmesan for topping

Instructions
 

  • Cook the chicken breasts in the skillet until done. Remove the chicken from the skillet and set it aside.
  • Add the oil and garlic to the skillet. Cook for one minute. Add the zucchini and tomatoes and cook until the vegetables soften.
  • Pour in the broth. Return the cooked chicken to the skillet.
  • Sprinkle the parmesan over the mixture. Cook until the sauce thickens slightly.
  • Serve the meal directly in the skillet.
