Strawberry Mousse

This recipe creates a light, silky, and refined dessert. The smooth, creamy strawberry fluff is perfect served in simple, elegant cups.
As I tested this mousse, the soft pink color and fluffy texture reminded me of the simple sweets my mom used to make when I needed cheering up. It was delicate, comforting, and surprisingly uplifting.

Ingredients
  

For the Mousse

  • 8 oz cream cheese or coconut cream If using coconut cream, ensure the contents are thick and creamy.
  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar free alternative
  • 5 medium size strawberries Stems removed.
  • 1/4 tsp vanilla bean paste Optional

Instructions
 

  • If you use cream cheese, let it reach room temperature. If you use coconut cream, open the can and check that the contents are thick and creamy. Discard any cans where the cream is hard and flaky.
  • Remove the stems from the strawberries. Blend or mash them until they form a puree.
  • Add all the remaining ingredients to the strawberry puree. Blend until the mixture is completely smooth using a food processor, blender, or hand mixer.
  • Transfer the mousse to serving dishes and refrigerate. The mousse will thicken significantly as it chills.
