This recipe creates a light, silky, and refined dessert. 8ozcream cheese or coconut creamIf using coconut cream, ensure the contents are thick and creamy.
4ozyogurt or additional cream cheese or coconut cream
1cuppowdered sugar or sugar free alternative
5medium sizestrawberriesStems removed.
1/4tspvanilla bean pasteOptional
Instructions
If you use cream cheese, let it reach room temperature. If you use coconut cream, open the can and check that the contents are thick and creamy. Discard any cans where the cream is hard and flaky.
Remove the stems from the strawberries. Blend or mash them until they form a puree.
Add all the remaining ingredients to the strawberry puree. Blend until the mixture is completely smooth using a food processor, blender, or hand mixer.
Transfer the mousse to serving dishes and refrigerate. The mousse will thicken significantly as it chills.
