Strawberry Dessert Sandwich

This dessert sandwich offers a playful, handheld treat. Layered strawberries create a visually appealing dessert that tastes as good as it looks.

Ingredients
  

For the Cake Layers

  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 1 tsp Baking powder
  • 1/4 cup Milk
  • 1 large Egg
  • 2 tbsp Melted butter

For the Filling and Topping

  • 1 pint Fresh strawberries Sliced
  • 1 cup Heavy whipping cream
  • 2 tbsp Powdered sugar

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a small baking sheet or line it with parchment paper.
  • Mix the flour, sugar, and baking powder in a bowl. In a separate bowl, whisk the milk, egg, and melted butter. Combine the wet and dry ingredients until just mixed.
  • Pour the batter onto the prepared baking sheet, spreading it into a thin, even layer about 1/4 inch thick. Bake for 5 to 7 minutes, or until the cake is lightly golden and set. Let it cool completely.
  • While the cake cools, prepare the whipped cream. Beat the heavy cream and powdered sugar together until stiff peaks form.
  • Once the cake is cool, cut it into four equal squares. These will be your sandwich layers. You will use two squares for each sandwich.
  • Assemble the sandwiches. Place one cake square down. Spread a layer of whipped cream on top, then arrange sliced strawberries over the cream. Top with the second cake square.
  • Lightly dust the top of the sandwich with any remaining powdered sugar before serving immediately.

Notes

This recipe uses a thin sheet cake base for easy cutting. For a richer flavor, you can substitute vanilla extract for 1/2 teaspoon of the flour.
