Strawberry Cream Sandwich

This recipe makes a soft, nostalgic dessert using cookies or sponge cake filled with fresh strawberry cream. The cream filling has a good balance so it does not overpower the fruit.

Ingredients
  

For the Sandwich

  • 8 soft cookies or sponge cake slices

For the Cream Filling

  • 1 cup heavy cream, cold
  • 2 tbsp powdered sugar
  • 1/2 cup chopped fresh strawberries

Instructions
 

  • Whip the cold heavy cream with the powdered sugar until soft peaks form.
  • Gently fold the chopped strawberries into the whipped cream mixture.
  • Spread the strawberry cream onto one cookie or cake slice.
  • Top with another cookie or cake slice to form a sandwich.
  • Chill the sandwiches for 15 minutes before you serve them.
