For the Frosting
- 1 cup Unsalted butter, softened Use room temperature butter
- 4 cups Powdered sugar, sifted
- 1 tsp Vanilla extract
- 2 tbsp Milk or heavy cream Add more if needed for consistency
- 1/4 tsp Salt
For Decoration
- 1/2 cup Rainbow sprinkles Or preferred colors
In a large bowl, use an electric mixer to beat the softened butter on medium speed until it is light and fluffy, about 3 minutes.
Gradually add the sifted powdered sugar to the butter, mixing on low speed until combined. Scrape down the sides of the bowl as needed.
Add the vanilla extract and salt. Mix on medium speed until smooth.
Add the milk or cream one tablespoon at a time until you reach a smooth, spreadable consistency. Beat on medium-high speed for 2 minutes to incorporate air.
Spread the frosting evenly over cooled sugar cookies using a spatula or knife.
Immediately press or sprinkle your desired amount of rainbow sprinkles onto the frosting before it sets.
Allow the frosting to set for about 15 minutes at room temperature before serving or stacking the cookies.
I first created this frosting for a weekend baking session with my nieces. We spent hours laughing, spreading frosting, and tossing sprinkles everywhere. It reminded me that sometimes, the simplest recipes bring the biggest smiles.
