Southwest Veggie Breakfast Taco

Southwest spices added a bold kick to the veggie filling. This recipe provides a fresh and flavorful vegetarian option for breakfast using tortillas.

Ingredients
  

  • 4 small tortillas
  • 3 eggs scrambled Cook soft and fluffy
  • 1/2 cup black beans Warm separately
  • 1/2 cup bell peppers diced
  • 1/4 cup corn
  • 1/4 avocado sliced For topping
  • 1 tbsp olive oil

For Garnish

  • cilantro
  • lime wedges

Instructions
 

  • Sauté the diced peppers and corn in olive oil until they are lightly caramelized.
  • Warm the black beans in a separate small pan or microwave.
  • Cook your eggs until they are soft and fluffy, scrambling them well.
  • Fill each tortilla with the scrambled eggs, the sautéed vegetables, and the warm black beans. The texture should balance the creamy eggs and crisp vegetables.
  • Top the filled tortillas with slices of avocado.
  • Garnish the tacos with fresh cilantro and serve with lime wedges on the side.
