Baked Oats
- 2 cups Rolled oats Not instant oats
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/4 cup Brown sugar Packed
- 1 cup Milk Dairy or non-dairy
- 1 large Egg
- 1/4 cup Applesauce Unsweetened
- 1 tsp Vanilla extract
Optional Mix-ins
- 1/2 cup Berries or chopped apple Fresh or frozen
Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
In a large mixing bowl, combine the rolled oats, baking powder, salt, cinnamon, and brown sugar. Mix these dry ingredients well.
In a separate small bowl, whisk together the milk, egg, applesauce, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Stir until everything is just combined. Do not overmix.
Fold in your chosen mix-ins, like berries or chopped apple, if you are using them.
Pour the oat mixture into the prepared baking dish and spread it evenly.
Bake for 30 to 35 minutes, or until the top is golden brown and the center is set. You can test it with a toothpick; it should come out mostly clean.
Let the baked oats cool for about 5 minutes before slicing into squares and serving warm.
This recipe is great for meal prepping. You can bake it on Sunday and store individual portions in the refrigerator for quick weekday breakfasts.
