Ingredients
  

  • 2 eggs
  • 1 cup spinach
  • 1/2 cup mushrooms
  • 1 slice whole-grain toast
  • 1 tbsp olive oil
  • To taste Salt and pepper

Instructions
 

  • Heat olive oil in a skillet.
  • Sauté mushrooms until soft.
  • Add spinach and cook until wilted.
  • Fry or scramble eggs in the same pan.
  • Serve eggs and vegetables with toast.
