Red Skin Potato Salad

Ingredients
  

  • 2 lbs red potatoes
  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 2 boiled eggs chopped
  • 1/4 cup celery chopped

Seasoning

  • to taste salt and pepper

Instructions
 

  • Boil the red potatoes until tender. Drain them well.
  • Allow the potatoes to cool, then slice them.
  • In a mixing bowl, combine the sliced potatoes, mayonnaise, mustard, chopped eggs, and celery.
  • Season the mixture with salt and pepper to your preference.
  • Chill the potato salad before you serve it.

Notes

Keeping the skins on the red potatoes adds texture and color to the final dish.
