Red Skin Potato Salad
This recipe uses red skin potatoes, keeping the skins on for texture and color. It is a simple, classic potato salad suitable for many occasions.

- 2 lbs red potatoes
- 1/2 cup mayonnaise
- 1 tbsp mustard
- 2 boiled eggs chopped
- 1/4 cup celery chopped
Boil the red potatoes until tender. Drain them well.
Allow the potatoes to cool, then slice them.
In a mixing bowl, combine the sliced potatoes, mayonnaise, mustard, chopped eggs, and celery.
Season the mixture with salt and pepper to your preference.
Chill the potato salad before you serve it.
Keeping the skins on the red potatoes adds texture and color to the final dish.
