Quick Chicken Skillet Summer

Ingredients
  

  • 2 chicken breasts (450g) sliced thin for fast cooking
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup parmesan finely grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

For Garnish

  • 1 parsley chopped

Instructions
 

  • Pat the chicken dry to ensure a proper sear. Season the chicken evenly with salt, pepper, and paprika.
  • Heat the olive oil and butter in a large skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side until golden brown and the internal temperature reaches 75°C (167°F). Remove the chicken from the skillet and set it aside to rest.
  • Lower the heat. Sauté the minced garlic in the skillet for 30 seconds.
  • Add the chicken broth to the skillet and let it reduce for 2 minutes.
  • Add the heavy cream and grated parmesan. Whisk until the sauce is smooth and reaches a nappe consistency (thick enough to coat the back of a spoon).
  • Return the chicken to the skillet. Coat the chicken well with the sauce and simmer for 2 minutes.
  • Slice the chicken. Spoon the glossy sauce over the slices and garnish with fresh parsley before serving.
