- 240 ml milk
- 1 large egg
- 2 tsp baking powder
- 1 tbsp sugar

- 0.5 cup Greek yogurt
- 1–2 cups fresh fruit berries, bananas, apples

- granola optional

1. Whisk flour, sugar, baking powder, and salt in a bowl.
2. In another bowl, whisk milk, egg, and melted butter.
3. Combine wet and dry ingredients into a smooth batter.
4. Heat a non-stick skillet and cook small pancakes until golden.
5. Fold warm pancakes into taco shapes.
6. Fill with yogurt, fruits, and optional toppings.
7. Serve immediately and enjoy.
Makes about 6 pancake tacos.
Fill just before serving to avoid soggy pancakes.
Store plain pancakes in the fridge for up to 3 days or freeze for later.
