Ingredients
  

  • 120 g flour
  • 240 ml milk
  • 1 large egg
  • 2 tsp baking powder
  • 1 tbsp sugar
  • salt Pinch of
  • 2 tbsp melted butter
  • 0.5 cup Greek yogurt
  • 1–2 cups fresh fruit berries, bananas, apples
  • honey optional
  • granola optional
  • nut butter optional
  • chocolate chips optional

Instructions
 

  • 1. Whisk flour, sugar, baking powder, and salt in a bowl.
  • 2. In another bowl, whisk milk, egg, and melted butter.
  • 3. Combine wet and dry ingredients into a smooth batter.
  • 4. Heat a non-stick skillet and cook small pancakes until golden.
  • 5. Fold warm pancakes into taco shapes.
  • 6. Fill with yogurt, fruits, and optional toppings.
  • 7. Serve immediately and enjoy.

Notes

Makes about 6 pancake tacos.
Fill just before serving to avoid soggy pancakes.
Store plain pancakes in the fridge for up to 3 days or freeze for later.
