One-Pot Tortellini Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 2 cups fresh or frozen cheese tortellini
  • 1 cup spinach
  • 1/2 tsp Italian seasoning
  • Salt and black pepper To taste

Instructions
 

  • Heat olive oil in a pot over medium heat.
  • Sauté onion until soft, about 4 to 5 minutes.
  • Add garlic and cook briefly.
  • Pour in broth, crushed tomatoes, and Italian seasoning.
  • Bring the mixture to a simmer and add tortellini.
  • Cook the tortellini according to package directions, about 5 to 7 minutes.
  • Stir in spinach until it wilts.
  • Season with salt and pepper, then serve warm.
