One-Pan Mediterranean Egg Dish

- 4 eggs
- 1 cup crushed tomatoes
- 1/2 onion, sliced
- 1/2 bell pepper, sliced
- 1 tsp paprika
- Olive oil For cooking
- Salt To taste
- Pepper To taste
Heat olive oil in a pan over medium heat.
Sauté the sliced onion and pepper until they become soft.
Add the crushed tomatoes, paprika, salt, and pepper to the pan.
Simmer the mixture for 8 to 10 minutes.
Make four small wells in the tomato mixture and crack one egg into each well.
Cover the pan and cook until the eggs reach your preferred doneness.
This dish is simple and rustic. You can add other vegetables like spinach or mushrooms if you wish.
