One-Pan Healthy Chicken Pasta

This recipe cooks everything in a single skillet, which reduces cleanup. It provides a balanced meal suitable for weeknight cooking.

Ingredients
  

  • 2 chicken breasts, sliced
  • 250 g pasta (penne or fusilli)
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 cups water or low-sodium chicken broth
  • To taste Salt and black pepper

Instructions
 

  • Heat olive oil in a large skillet or deep pan over medium heat.
  • Add chicken slices and cook until lightly golden.
  • Stir in garlic and cook for 30 seconds.
  • Add pasta, tomatoes, and water or broth.
  • Bring the mixture to a gentle boil, then reduce the heat and simmer.
  • Cook until the pasta is tender and the liquid is mostly absorbed.
  • Stir in spinach until it wilts.
  • Season with salt and pepper, then serve hot.

Notes

I like how everything comes together in one pan. This keeps the dish looking clean and simple on the plate.
