Ingredients
  

Crust

  • 12 graham crackers or cookies crushed
  • 2 tbsp unsalted butter melted

Cheesecake Layer

  • 1 cup cream cheese softened
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream

Strawberry Layer

  • 1.5 cups fresh strawberries diced
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar

Instructions
 

  • Crush graham crackers or cookies until fine. Mix with melted butter until texture resembles wet sand. Spoon into parfait cups and press lightly.
  • Beat cream cheese, powdered sugar, and vanilla until smooth. Whip the cream to stiff peaks in a separate bowl and fold into the cream cheese mixture.
  • Toss diced strawberries with lemon juice and sugar. Let sit for at least 10 minutes to create syrup.
  • Layer cheesecake filling over the crust. Add strawberries and syrup. Repeat if desired. Garnish with mint or cookie crumble.
  • Cover and chill in refrigerator for at least 2 hours or overnight for best flavor.
