Instructions
Crush graham crackers or cookies until fine. Mix with melted butter until texture resembles wet sand. Spoon into parfait cups and press lightly.
Beat cream cheese, powdered sugar, and vanilla until smooth. Whip the cream to stiff peaks in a separate bowl and fold into the cream cheese mixture.
Toss diced strawberries with lemon juice and sugar. Let sit for at least 10 minutes to create syrup.
Layer cheesecake filling over the crust. Add strawberries and syrup. Repeat if desired. Garnish with mint or cookie crumble.
Cover and chill in refrigerator for at least 2 hours or overnight for best flavor.
