Mediterranean Breakfast Baked in One Pan

Ingredients
  

  • 6 eggs
  • 1 cup cherry tomatoes
  • 80 g feta cheese, crumbled
  • 50 g olives, sliced
  • 1 tbsp olive oil
  • Dried oregano, salt & pepper To taste

Instructions
 

  • Preheat your oven to 190°C.
  • Add the tomatoes and olives to a baking dish.
  • Drizzle the contents with olive oil and season with oregano, salt, and pepper.
  • Crack the eggs on top of the vegetables.
  • Sprinkle the crumbled feta cheese over the eggs and vegetables.
  • Bake for 15 to 18 minutes, or until the eggs are just set.

Notes

This dish is great for a shared meal or a breakfast buffet because it cooks all at once in one pan.
