Ingredients
  

  • 2 cups Mashed potatoes Leftovers work well
  • 1 cup Shredded cheese Cheddar or mozzarella
  • 1/2 cup Cooked bacon Finely chopped, turkey or beef
  • 1 Egg
  • To taste Salt and pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Combine the mashed potatoes, shredded cheese, chopped bacon, and egg in a bowl.
  • Season the mixture lightly with salt and pepper.
  • Spoon the mixture into a mini muffin tin, filling each cup.
  • Bake for 20 to 25 minutes, or until the edges are crispy.

Notes

You can substitute other cheeses like Monterey Jack for variety. If your mashed potatoes are thin, add one tablespoon of flour to help the puffs hold their shape better.
