Marshmallow Leprechaun Popcorn

This recipe makes a fun, festive, and slightly chewy popcorn treat perfect for St. Patrick's Day celebrations. I tested this to keep the marshmallow coating soft so the popcorn stayed easy to eat.

  • Parchment paper

Ingredients
  

  • 6 cups popped popcorn
  • 2 cups mini marshmallows
  • 3 tbsp butter
  • Green sprinkles

Instructions
 

  • Melt butter in a large pot over low heat.
  • Add marshmallows and stir until melted.
  • Remove from heat and fold in popcorn.
  • Spread the mixture on parchment paper and add green sprinkles.
  • Let the mixture cool completely, then break it apart into serving pieces.
