Lucky Charms Pistachio Macarons

These macarons combine the subtle flavor of pistachio with the fun addition of chopped Lucky Charms marshmallows. Pistachio brings a subtle depth that grounds the sweetness and makes these macarons feel surprisingly balanced.

Ingredients
  

Macaron Shells

  • 1 cup almond flour
  • 3/4 cup powdered sugar
  • 2 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • As needed Green food coloring

Pistachio Filling

  • 1/2 cup unsalted butter, softened
  • 1.5 cups powdered sugar
  • 3 tbsp pistachio paste
  • As needed Lucky Charms marshmallows, finely chopped

Instructions
 

  • Sift almond flour and powdered sugar together.
  • Beat egg whites until foamy, then slowly add granulated sugar and beat to stiff peaks.
  • Fold dry ingredients into egg whites gently.
  • Add food coloring and mix until smooth and glossy.
  • Pipe small circles onto lined baking sheets.
  • Rest 30 minutes, then bake at 300°F (150°C) for 14–16 minutes. Cool completely.
  • Beat butter, powdered sugar, and pistachio paste until creamy.
  • Fold in marshmallows.
  • Sandwich macarons with filling.
