Low Carb Creamy Chicken with Broccoli

Ingredients
  

  • 2 chicken breasts cubed
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar
  • 1/4 cup parmesan
  • to taste salt
  • to taste pepper

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the cubed chicken and cook until golden brown and fully cooked through. Remove the chicken from the skillet and set it aside.
  • Steam the broccoli florets for 3 to 4 minutes until they are tender-crisp.
  • In the same skillet, sauté the minced garlic briefly. Add the heavy cream and both cheeses (cheddar and parmesan). Stir the mixture constantly until the cheese melts and the sauce becomes smooth.
  • Return the cooked chicken and the steamed broccoli to the skillet with the sauce. Simmer the mixture until the sauce thickens and coats the chicken and broccoli evenly.
  • Serve the dish hot in a bowl. Top with extra shredded cheese and freshly cracked pepper for a rich finish.
