Low Carb Beef Roll Ups

Ingredients
  

For the Roll Ups

  • 8 Thinly sliced beef steak (like minute steak or top round) Pounded thin
  • 4 oz Cream cheese Softened
  • 1/2 cup Shredded mozzarella cheese
  • 2 tbsp Chopped fresh parsley
  • 1/4 tsp Garlic powder

For the Sauce

  • 10.5 oz Can condensed cream of mushroom soup
  • 1/2 cup Beef broth
  • 1/4 cup Sour cream

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  • In a small bowl, combine the softened cream cheese, mozzarella cheese, parsley, garlic powder, salt, and pepper. Mix until the filling is uniform.
  • Lay out the thin beef slices. Spread an equal amount of the cheese mixture onto one side of each beef slice.
  • Roll each slice tightly, starting from the short end, to form a roll up. Secure with a toothpick if necessary.
  • In the same small bowl (or a separate one), whisk together the cream of mushroom soup, beef broth, and sour cream until smooth. Pour this sauce evenly into the bottom of the prepared baking dish.
  • Place the beef roll ups seam-side down on top of the sauce in the baking dish.
  • Bake for 25 to 30 minutes, or until the beef is tender and the sauce is bubbly. Remove toothpicks before serving.

Notes

For a different flavor, try adding a thin slice of ham or a sprinkle of dried onion flakes into the cheese filling before rolling. This recipe works well for meal planning because the leftovers reheat nicely for lunch the next day.
