Light Garlic Chicken Pasta

Garlic adds so much flavor that this pasta never feels heavy, even on busy nights.

  • large pot
  • Skillet

Ingredients
  

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 2 chicken breasts, sliced
  • 4 garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan
  • Fresh parsley

Instructions
 

  • Cook pasta until al dente. Reserve 1/2 cup pasta water before draining.
  • Heat olive oil in a skillet and cook the sliced chicken until it is done.
  • Add the minced garlic and cook briefly.
  • Pour in the chicken broth and simmer for 2 minutes.
  • Add the cooked pasta and a splash of the reserved pasta water if the sauce seems too thick.
  • Toss everything with the Parmesan cheese and fresh parsley.
  • Serve immediately.
