Lemon Garlic Chicken Summer

Lemon and garlic created a refreshing flavor perfect for summer.

Ingredients
  

  • 2 chicken breasts sliced horizontally
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 3 tbsp juice of 1 lemon (about 3 tbsp)
  • 1 zest of 1 lemon
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter

Instructions
 

  • Season chicken with salt and pepper.
  • Heat olive oil in skillet over medium heat.
  • Cook chicken 4 to 5 minutes per side until golden and internal temperature reaches 75°C. Remove and set aside.
  • In the same pan add garlic and sauté for 30 seconds.
  • Add chicken broth, lemon juice, zest, and Italian seasoning. Simmer for 3 to 4 minutes to reduce slightly.
  • Stir in butter for a glossy sauce.
  • Return chicken and coat evenly.

Notes

Serve with rice or roasted vegetables. Garnish with lemon slices and fresh parsley for bright summer plating.
