Keto Dinner Roll Ups

I first tested this recipe for a friend who had just started keto. The simplicity and flavor won her over immediately and reminded me how adaptable comfort food can be.

Ingredients
  

For the Roll Ups

  • 8 Thinly sliced deli roast beef or turkey Use slices large enough to wrap filling
  • 4 oz Cream cheese, softened
  • 1/2 cup Shredded cheddar cheese
  • 2 tbsp Chopped fresh chives
  • 1/2 tsp Garlic powder

Optional Dipping Sauce

  • 1/2 cup Sugar-free ranch dressing

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  • In a small bowl, mix the softened cream cheese, shredded cheddar cheese, chopped chives, garlic powder, salt, and pepper until well combined.
  • Lay out the slices of roast beef or turkey on a clean surface. Spread about 1 to 1.5 tablespoons of the cheese mixture evenly over each slice.
  • Roll each slice up tightly, starting from one end. Place the roll ups seam-side down on the prepared baking sheet.
  • Bake for 15 to 20 minutes, or until the cheese filling is melted and the edges of the meat are slightly crispy.
  • If using the optional dipping sauce, whisk the ranch dressing ingredients together in a small bowl.
  • Serve the Keto Dinner Roll Ups warm with the dipping sauce on the side.

Notes

These roll ups are simple to adapt. You can swap the filling for bacon and cream cheese, or use sliced provolone instead of cheddar for a different flavor profile. They work well for quick dinners or as a satisfying packed lunch.
