Katsu Bowl with Brown Rice

This recipe provides a hearty, wholesome meal using brown rice as a base. The brown rice held up well during meal-prep testing.

Ingredients
  

  • 2 chicken breasts
  • 60 g flour
  • 1 egg beaten
  • 100 g breadcrumbs
  • 30 ml oil
  • 300 g cooked brown rice
  • 100 g shredded cabbage
  • 50 g grated carrots
  • 30 ml katsu-style sauce alcohol-free

Instructions
 

  • Flatten chicken breasts to an even thickness.
  • Coat the chicken in flour, dip it in the beaten egg, and then press it into the breadcrumbs.
  • Heat the oil in a skillet over medium heat.
  • Cook the chicken for 4 to 5 minutes per side until it is golden brown and cooked through.
  • Slice the cooked chicken into strips.
  • Assemble the bowls with brown rice, cabbage, carrots, and the sliced chicken.
  • Drizzle the katsu sauce over the bowls and serve them warm.
