Ingredients
  

  • 1 cup quinoa
  • 1/2 avocado
  • 1/2 cup cucumber
  • 1/2 cup chickpeas
  • 1 tbsp olive oil
  • lemon juice

Instructions
 

  • Cook quinoa and cool slightly.
  • Combine all ingredients in a bowl.
  • Drizzle with olive oil and lemon juice.
  • Serve in a wide bowl with a colorful arrangement and seeds on top.
