Ingredients
For the Wraps

grilled chicken thighs

whole wheat large tortilla wraps
1
yellow sweet pepper
red or orange also work
1
cup
baby spinach leaves
arugula can be substituted
1
avocado

tablespoons
herb and garlic cream cheese
any cheese works
1
tablespoon
hot sauce
optional
Instructions
Heat a skillet or nonstick pan over medium heat.
Cut the grilled chicken thighs into 1/2 inch strips.
Slice the yellow pepper into 1/2 inch strips.
Slice the avocado into 1/2 inch strips.
Spread 1 tablespoon of cream cheese near the bottom of a tortilla wrap.
Place 1/4 cup of baby spinach on the cream cheese.
Add the chicken strips on top of the spinach.
Layer the yellow pepper strips over the chicken.
Top with avocado slices and drizzle with hot sauce if desired.
Fold both sides of the tortilla toward the center, then fold the bottom up to form a pillow shape.
Place the wrap face down on the heated skillet and cook until browned on all sides.
Repeat for the remaining wraps.
Serve warm with pickles or cornichon.
Notes
For meal prep, assemble wraps without cooking and store in the fridge. Cook just before serving.
