Healthy Energy Bites

These no-bake energy bites are simple to make and provide a quick source of fuel for active days. They are portable and packed with wholesome ingredients perfect for snacking.
These bites were born during a long day of shooting when I needed a quick pick-me-up. One bite gave the perfect burst of energy and reminded me why little homemade snacks are such a game-changer.

Equipment

  • Large mixing bowl
  • Baking Sheet

Ingredients
  

  • 1 1/2 cups Old fashioned oats
  • 2/3 cup Almond butter
  • 2/3 cup Unsweetened shredded coconut
  • 1/2 cup Ground flaxseed meal
  • 1/3 cup Honey
  • 1/2 cup Dark stevia sweetened chocolate chips
  • 1 tablespoon Pure vanilla extract
  • 1 tablespoon Chia seeds
  • 1 tablespoon Hemp seeds

Instructions
 

  • Place all ingredients in a large bowl and stir until well combined.
  • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper or waxed paper.
  • Place the tray in the freezer for 20 minutes to allow the balls to firm up.
  • Store the bites in the refrigerator in an airtight container for 1 week or freeze them for 2 to 3 months. Enjoy your snack.
