Healthy Egg Breakfast with Feta

This recipe uses a few quality ingredients to make a simple breakfast feel complete and satisfying.

  • Non-stick skillet

Ingredients
  

  • 3 eggs
  • 80 g feta cheese crumbled
  • 1 cup fresh spinach or kale
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Optional Additions

  • cherry tomatoes
  • herbs parsley or oregano

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add spinach and sauté until just wilted.
  • Whisk eggs lightly with salt and pepper.
  • Pour eggs into the pan and cook gently, stirring softly.
  • Sprinkle feta cheese over the eggs while they are still slightly creamy.
  • Cook until just set. Do not overcook.
  • Finish with herbs or tomatoes if you want and serve warm.
