Healthy Comfort Lasagna Soup

Transforming lasagna into soup made it easier to adapt while keeping that familiar comfort.

Ingredients
  

  • 400 g ground turkey
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 800 g crushed tomatoes
  • 1 L chicken broth
  • 8 lasagna noodles, broken
  • 5 g Italian seasoning

Toppings

  • 100 g ricotta cheese
  • 100 g shredded mozzarella

Instructions
 

  • Brown the ground turkey in a large pot.
  • Add the diced onion and minced garlic; cook until softened.
  • Stir in the crushed tomatoes, chicken broth, and Italian seasoning.
  • Bring the mixture to a simmer and add the broken lasagna noodles.
  • Cook for 12 to 15 minutes, or until the noodles are tender.
  • Ladle the soup into bowls and top each serving with ricotta and mozzarella cheese.
  • Serve warm.
