Healthy Chicken Casserole

This casserole uses simple ingredients to create a comforting, colorful dish that is suitable for family meals. I focused on keeping the casserole colorful so it felt comforting but not heavy.

Ingredients
  

  • 2 cups cooked chicken, diced
  • 2 cups mixed vegetables (broccoli, carrots, peas)
  • 1 cup Greek yogurt or light cream
  • 1/2 cup shredded cheese
  • To taste Salt and pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Combine the diced chicken and mixed vegetables in a bowl.
  • Stir in the Greek yogurt or cream and season with salt and pepper.
  • Transfer the mixture to a baking dish.
  • Sprinkle the shredded cheese on top of the mixture.
  • Bake for 30 to 35 minutes until the top is lightly golden and the casserole is bubbly.

Notes

This recipe is easy to adapt. You can substitute the chicken with turkey or use different low-carb vegetables based on what you have available.
