Green Velvet Sandwich Cookies

For the Cookies
- 2.25 cups all-purpose flour
- 1 tbsp cocoa powder
- 1 tsp baking powder
- 0.5 tsp salt
- 0.75 cup unsalted butter, softened
- 0.75 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- To desired amount Green food coloring
For the Cream Cheese Filling
- 8 oz cream cheese, softened
- 0.5 cup unsalted butter, softened
- 1.5 cups powdered sugar
- 1 tsp vanilla extract
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In one bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In a separate bowl, cream the butter and granulated sugar until the mixture is light and fluffy.
Add the egg, vanilla extract, and green food coloring to the butter mixture. Mix until the color is even.
Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
Scoop tablespoon-sized portions of dough and roll them into balls.
Place the dough balls on the prepared baking sheet and gently flatten them slightly.
Bake for 10 to 12 minutes, until the cookies are set but still soft in the center.
Let the cookies cool completely before you proceed to fill them.
To make the filling, beat the softened cream cheese and butter together until smooth. Add the powdered sugar and vanilla extract, mixing until the frosting is light and creamy. Once the cookies are cool, spread the filling on the flat side of one cookie and top it with a second cookie to form a sandwich.
