  • 400 g chicken breast sliced into strips or cubes
  • 300 g pasta fettuccine preferred, or any shape
  • 3 cloves garlic minced finely
  • 3 tbsp olive oil extra virgin preferred
  • Parmesan cheese optional, to taste

Instructions
 

  • Boil a large pot of salted water. Cook pasta according to package instructions, minus one minute for al dente. Drain, reserving a few tablespoons of pasta water.
  • In a large skillet, heat olive oil over medium-high heat until shimmering. Add chicken and sear until golden and cooked through.
  • Reduce heat and add minced garlic. Stir constantly for about 30 seconds until fragrant—do not let it brown.
  • Add cooked pasta to the skillet and toss everything together, coating the noodles in garlic oil. Add a splash of reserved pasta water if needed to loosen.
  • Serve immediately with optional grated Parmesan cheese on top.

Notes

For a spicier twist, add red pepper flakes with the garlic. Swap in chicken thighs or shrimp if preferred. Leftovers store well in the fridge for 3–4 days in an airtight container. Reheat with a splash of olive oil or water to restore texture.
