Garlic Butter Chicken Dinner

For the Chicken
- 1.5 lb boneless, skinless chicken breasts Cut into 1-inch pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
For the Garlic Butter Sauce
- 4 tbsp butter
- 4 cloves garlic Minced
- 1/2 cup chicken broth
- 2 tbsp fresh lemon juice
- 2 tbsp fresh parsley Chopped, for garnish
Season the chicken pieces with salt and pepper. Heat the olive oil in a large skillet over medium-high heat.
Add the chicken to the hot skillet and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
Pour in the chicken broth and lemon juice. Bring the sauce to a simmer and let it reduce slightly, about 2 minutes, scraping up any browned bits from the bottom of the pan.
Return the cooked chicken to the skillet. Toss the chicken gently to coat it completely in the garlic butter sauce.
Remove from heat. Garnish with fresh parsley before serving immediately over rice or pasta.
