Frozen Lemon Yogurt Bark

I first made this bark during a warm week when I wanted something sweet but not heavy. Breaking it into icy pieces straight from the freezer felt so refreshing — like a little burst of sunshine with every bite.

Ingredients
  

  • 400 g Greek yogurt
  • 3 tbsp honey
  • 1 Lemon zest
  • 1 Lemon juice

Instructions
 

  • Mix the Greek yogurt, honey, and lemon zest and juice together in a bowl.
  • Spread the yogurt mixture thinly onto a baking sheet lined with parchment paper.
  • Place the sheet in the freezer and freeze for 3 hours, or until solid.
  • Remove from the freezer and break the frozen yogurt into small, irregular pieces.

Notes

This treat is best served immediately after breaking it into pieces. You can store leftovers in an airtight container in the freezer for up to two weeks.
