Ingredients
  

Main Ingredients

  • 8 pineapple rings fresh or canned
  • 1 cup pineapple juice for soaking
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened shredded coconut
  • 2 large eggs
  • 1/2 cup coconut milk
  • vegetable oil for frying

Creamy Dipping Sauce

  • 4 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 2 tablespoons pineapple juice reserved for sauce

Instructions
 

  • Place the pineapple rings into a shallow dish and pour 1 cup of pineapple juice over them. Let soak for 30 minutes to 1 hour. Drain and pat dry.
  • Prepare three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with shredded coconut.
  • Dredge each pineapple ring in flour, dip into egg mixture, and coat with shredded coconut.
  • Heat about 1 inch of vegetable oil in a deep skillet to 350°F (175°C). Fry the rings for about 1 minute per side until golden brown. Drain on paper towels.
  • For the dipping sauce: Beat cream cheese and powdered sugar until smooth. Add 2 tablespoons of reserved pineapple juice and mix until creamy.

Notes

For extra flavor, you can sprinkle a little cinnamon over the fried rings!
