  • large pot

Ingredients
  

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 cup white beans (drained)
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot.
  • Add chicken and cook until lightly browned.
  • Add onion, carrots, and celery; sauté for 5 minutes.
  • Pour in broth and bring the mixture to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add beans and season with salt and pepper to taste.
  • Serve hot.
