Family Friendly Low Carb Chicken

Ingredients
  

Chicken and Seasoning

  • 1.5 lbs Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Sauce

  • 2 tbsp Olive oil
  • 1 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1/2 cup Parmesan cheese Grated
  • 1 cup Broccoli florets Fresh or frozen

Instructions
 

  • Place the chicken pieces in a bowl. Add the garlic powder, onion powder, oregano, salt, and pepper. Toss to coat the chicken evenly.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
  • Pour the chicken broth into the same skillet. Scrape up any browned bits from the bottom of the pan. Bring the broth to a simmer.
  • Reduce the heat to medium-low. Stir in the heavy cream and Parmesan cheese until the sauce thickens slightly. This takes about 3 minutes.
  • Add the broccoli florets to the sauce. Cook until the broccoli is tender-crisp, about 5 minutes.
  • Return the cooked chicken to the skillet. Stir to coat the chicken and broccoli in the sauce. Heat through for 1 to 2 minutes before serving.

Notes

Serve this dish over cauliflower rice or zucchini noodles to keep it low carb. For picky eaters, you can serve the chicken plain alongside the sauce and vegetables separately.
