Fall Sausage Soup Recipe

For the Soup
- 1 lb Turkey sausage, casings removed Or preferred sausage
- 1 Yellow onion, chopped
- 2 cups Carrots, chopped
- 2 stalks Celery, chopped
- 6 cups Chicken or vegetable broth
Sauté the turkey sausage and chopped onion in a large pot over medium heat until the sausage is browned. Break the sausage apart as it cooks.
Add the chopped carrots and celery to the pot with the sausage mixture.
Pour in the broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes, or until the vegetables are tender.
This recipe is easy to adapt. You can add a splash of heavy cream at the end for a creamier texture, or stir in dried herbs like thyme or sage during the simmering stage to deepen the fall flavor.
