Easy Summer Dinner Recipes Chicken

Ingredients
  

  • 2 chicken breasts sliced into cutlets
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup cherry tomatoes
  • 1 cup spinach
  • 1/4 cup parmesan
  • 1/2 tsp Italian seasoning
  • to taste salt
  • to taste pepper

Instructions
 

  • Season chicken with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken for 4–5 minutes per side until golden and the internal temperature reaches 75°C. Remove the chicken and set it aside.
  • In the same pan, sauté garlic for 30 seconds. Add broth and scrape up any browned bits from the bottom of the pan.
  • Add tomatoes and simmer for 3 minutes.
  • Stir in spinach until it wilts.
  • Return the chicken to the pan, sprinkle with parmesan, and simmer for 2–3 minutes until the sauce slightly thickens.
  • Serve in a shallow bowl with extra parmesan and fresh basil for plating.
