Place the chicken breasts, sliced zucchini, cherry tomatoes, sliced onion, garlic, chicken broth, 2 tablespoons of olive oil, Italian seasoning, salt, and pepper into the crockpot.
Cover the slow cooker. Cook on LOW for 5 to 6 hours or on HIGH for 3 hours. The chicken should be tender and easily shreddable.
Remove the chicken from the pot and shred it lightly. Return the shredded chicken to the pot and mix it with the cooking juices.
Serve the mixture in bowls. Top with fresh basil and drizzle with extra olive oil before serving.
