Easy Summer Crockpot Chicken

Ingredients
  

  • 2 chicken breasts
  • 1 zucchini sliced
  • 1 cup cherry tomatoes
  • 1/2 onion sliced
  • 2 cloves garlic
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper

For Serving

  • fresh basil
  • olive oil for drizzling

Instructions
 

  • Place the chicken breasts, sliced zucchini, cherry tomatoes, sliced onion, garlic, chicken broth, 2 tablespoons of olive oil, Italian seasoning, salt, and pepper into the crockpot.
  • Cover the slow cooker. Cook on LOW for 5 to 6 hours or on HIGH for 3 hours. The chicken should be tender and easily shreddable.
  • Remove the chicken from the pot and shred it lightly. Return the shredded chicken to the pot and mix it with the cooking juices.
  • Serve the mixture in bowls. Top with fresh basil and drizzle with extra olive oil before serving.
