Easy Summer Chicken Dinner (One Pan)

This one-pan meal simplifies weeknight cooking. It uses simple ingredients and requires minimal cleanup, making it suitable for busy families.

Ingredients
  

  • 2 chicken breasts sliced
  • 2 cups baby potatoes halved
  • 1 cup green beans
  • 1 red bell pepper sliced
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 lemon juice of

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • Toss the halved potatoes with 1 tablespoon of olive oil. Roast them on the sheet pan for 15 minutes first.
  • Add the sliced chicken, green beans, and sliced peppers to the pan with the potatoes.
  • Drizzle the remaining oil over the chicken and vegetables. Sprinkle with minced garlic, paprika, Italian seasoning, salt, and pepper. Toss everything together on the pan until coated.
  • Roast for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Finish the dish by squeezing the juice of half a lemon over everything before serving.

Notes

One-pan meals made weeknight dinners much easier during testing. Serve the meal directly on the sheet pan or transfer it to a large platter. Garnish with fresh parsley and extra lemon wedges if desired.
